Carrot salad
Just by adding roasted walnuts and almonds, wholegrain mustard and chopped pickles to a classic carrot and raison salad, you can create flavorful, crunchy sweet and delightfully balanced carrot salad! This is simple and healthy way to eat tons of carrots.
  • 1 medium sized fresh carrot, grated
  • 1 tbsp raisins, chopped
  • 1-2 tbsp walnuts and almonds, chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp pickles, chopped
  • 1 tsp wholegrain mustard
  • ½ – 1 tbsp fresh lemon juice or vinegar
  • ½ 1 tsp sugar, or maple syrup
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  1. Combine all the ingredients gently in a medium sized bowl
  2. Season with a little salt and pepper to taste
  3. Cover and refrigerate for at least one hour or overnight until ready to serve. The salad would be harmonious
