Soboro, minced chicken
This ginger flavored soboro, minced chicken and sweet scrambled eggs are my favorite tipping for rice and their combination is perfect. Soboro can be prepared the night before, and everything can be ready in the morning.
  • For soboro, minced chicken: 300g minced chicken
  • 1 tbsp white soy sauce, or soy sauce
  • ½ tbsp sugar
  • 1 tbsp sake
  • 100cc water
  • For soboro eggs: 3 eggs
  • 1 tbsp sugar
  • 2 pinches salt
  1. For soboro, minced chicken: Put all the ingredients into a pot over medium-low heat.
  2. Stirring frequently, cook until the chicken is fully cooked
  3. Reduce the heat to low and cook until all the liquid is almost evaporated
  4. For soboro eggs: Beat eggs lightly and season with sugar and salt
  5. Heat a non-stick frying pan over low heat
  6. Pour the eggs mixture and cook while stirring frequently with a whisk or chopsticks until the eggs is well scrambled into small pieces
