Miso paste is a great way to extra rich flavor. This miso stir-fry is a healthy quick vegetables dish made with fresh bell pepper and eggplants and cooked with salty-sweet miso sauce mixture. The ratio of miso to sake to mirin is 2:2:1. But I suggest that you make some adjustments to adapt to your liking.

This root vegetables soy stir-fry ‘kimpira’ is always ideal side dish. You can use any vegetables you would like for this recipe, my favorites are burdock root, lotus root and carrot. I also like the combination of pork and the skin of daikon radish for kimpira. The ingredients for stir-fry sauce are soy sauce, sake and sugar.
少し手間はかかるけれど、旬の根菜は本当に美味しいね。
根菜をお弁当のおかずにするならキンピラが一番好き。
定番の牛蒡、蓮根、人参の他に、豚肉と大根の皮の組み合わせも◎
