Avocado green olive tofu muffins, 6 servings
It is quick and easy to make and perfect for breakfast and lunch meal. (I use a 6 hole muffins tin and put muffin cups into it).
  • Dry ingredients:150g all-purpose flour, 1 tbsp brown sugar, ½ tsp salt and ¼ tsp baking soda
  • Wet ingredients: 100g kinu tofu, 50ml olive oil, 50ml milk, 2 tsps vinegar
  • 1 avocado, cut into 2 cm cubes
  • 6-8 green olives, cut in half.
  1. Preheat the oven to 180℃
  2. Mix all the dry ingredients, Sift together into a large bowl and set aside.
  3. Mix all the wet ingredients in a bowl with a hand mixer (I use Bamix), stir for a minute.
  4. Add the mixture to the dry ingredients and mix up until just smooth, add avocado and olives to it and stir them roughly.
  5. Pour in muffin tins, top with olives (not included in recipe)
  6. Bake it for 20-25 minutes until the fork comes clean.
  7. Serve hot! you can warm these muffin up when they are prepared a day ahead.
